Simple Green Salad

Simple, easy to prepare, and refreshing salads are my favourite. I really don’t enjoy overcomplicating my meals. Sometimes it can be challenge to get enough vegetables into my diet, however simple salads like these make it that much easier. The great thing about salads are that you can pretty much add whatever you want to them.

I started making this salad after receiving my first Good Food Box from FoodShare. There were so many amazing contents inside the box, and I was really excited to try them out.

This salad features red leaf lettuce, cherry tomatoes, cucumber, walnuts, olive oil, balsamic vinegar, salt, and pepper.  I usually have salads as a side dish, however, it you were looking to make this salad your main meal you could add extra ingredients such as tofu, chicken, or goat cheese for more protein. That would help you to feel fuller for a longer period of time.

As someone who does not normally enjoy tomatoes, I have to say these cherry tomatoes really gave the salad a punch. They provided a great texture and flavour.

  • 1 head red leaf lettuce
  • 15 cherry tomatoes
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1/2 cucumber


  • Wash and chop the lettuce and cherry tomatoes. Dry the lettuce.
  • In a large bowl add the lettuce, tomatoes, and top with the walnuts.


  • In a small bowl mix the olive oil, balsamic vineger, salt, and pepper.
  • Pour all over the salad and mix well.
